Designing a new Demonstration Bakery & Café
Gloria Crumb is a professor at Johnson & Wales, an expert in the centuries old tradition of bread making, and a skillful teacher who enjoys watching others learn to make bread. She has dreamed of a time when she could combine her interests and experience to educate the general public about bread and bread making.
Expansion
While bread is set to rise and the yeast is fermented, the yeast helps the bread to have its shape and taste. Also, the air pockets created by the yeast makes the bread get bigger in size. The yeast’s expansion is one of the most important parts in this process. I focused on the expansion of the yeast as my concept, but it also became a translation of expansion of the liveliness in the city Pawtucket, Rhode Island. Because Pawtucket is a poor city, the city would be able to expand their lively atmosphere by having the bakery. To spread the bakery’s animated feeling into the city, I wanted it to be an open space. People would be able to move fast and see others moving around busily and quickly. Therefore, people’s movements became also the expansion of the liveliness.
